But, before you go melting more cheese onto your plate. Check out this version that takes this favorite and balances it out into a bite sized, portable and less messy dish.
Both the broccoli and cheddar are processed into small, rice like pieces before cooking. This ensures every bite has a balance of both. Plus they’re combined with a some other ingredients for added flavor and texture.

Ingredients
- broccoli – raw & riced. This might be available in the prepared produce section of your grocery store. If not, all it is is minced broccoli. Make it yourself (using the stem and/or florets) by pulsing in a small food processor or finely chopping with a knife, into small pieces that resemble grains of rice.
- rolled oats
- cheddar cheese – cut into small pieces from a large block of cheese. If your food processor is already out to prepare the broccoli, use it for the cheese too. Shredded cheese can be used here as well. (May want to use kitchen shears run a knife through it, if the shreds are very long.)
- scallions – thinly slice both the green and white portions
- spices – including granulated garlic, onion powder, salt & pepper
- eggs – large
How to make broccoli cheddar cheese bites
Ready to give this recipe a try? The first thing to do it to prep the broccoli & cheese by chopping or processing into small pieces/grated. (Unless you’ve purchased it already prepped.)
I like getting this step out of the way at the beginning.
Dump meal prep
Place all of the ingredients into a large bowl. Stir together until well combined.
Portion into patties
Use a small cookie scoop, measuring spoon or even a large spoon to form the mixture into 1 tablespoon size portions.
Place each portion directly onto a large sheet pan that’s lined with parchment paper. Press each one down to flatten the tops.
The raw mixture will appear loose and crumbly. It doesn’t bind properly until after it comes out of the oven. Once the cheese melts, the patties will hold together.
Bake for 25 minutes in a preheated 350°F. Until the patties are set and the edges have turned golden brown. Remove from the oven and let cool for a couple minutes before serving.

Yes. These will stick if cooked directly on a sheet pan. Highly recommend using a piece of parchment or a silicone baking mat.

- 1¼ cup (133 grams) riced or minced broccoli
- ½ cup (60 grams) rolled oats
- ½ cup (2 ounces/56 grams) finely chopped cheddar cheese
- ¼ cup (26 grams, ~4 pieces) chopped scallions
- 1 teaspoon granulated garlic
- ½ teaspoon onion powder
- ½ teaspoon coarse black pepper
- ⅛ teaspoon kosher salt
- 2 large eggs
Instructions
- Preheat oven to 350°F and line a large sheet pan with parchment paper.
- In a large bowl, mix together all the ingredients.
- Use a small cookie scoop to place 1½ tablespoons portions onto the sheet pan. Press each one down into a patty.
- Bake 25 minutes, until golden brown.
