Nothing says back to school season better than a giant cake that looks like a hamburger…right? Ok, maybe not. Unless you’re playing another joke on the kids. Made from layers of fresh fruit sandwiched between two cashew chocolate chip cookies, this giant burger cake can still be a fun dessert to celebrate the end of Summer and the start of a new school year.

IG Cookie Inspiration
The inspiration behind this cashew cookie came from fellow RD, Rachael over at Rachael’s Good Eats. In case you haven’t seen it, her Cashew Chocolate Chip Cookie Skillet is a huge hit on social media. Rightfully so. This cookie is dairy, gluten, grain and refined sugar free and let me tell you it’s seriously amazing—in both taste and nutrition.
Rachael’s recipe also includes a helpful substitutions list. A few months ago, I was playing around with this recipe and completely missed the warning to follow the directions to a “T” for it to turn out right. Adding both baking soda and baking powder by mistake. Luckily they still came out delicious and led to the development of this recipe.

Hamburger cookie ingredients
Cookie burger bun:
- eggs
- coconut oil – want it to be a liquid consistency for this recipe
- maple syrup
- vanilla extract
- cashew butter
- almond flour
- baking supplies & spices – including both baking soda & powder, fine sea salt, cinnamon
- white chocolate chips – regular or minis
- sliced almonds – to resemble super sized sesame seeds
Burger Toppings:
- kiwis – peel off the fuzzy skin & slice to resemble pickles.
- watermelon – cut a thick cross section through the largest or roundest part of your watermelon. Make small cuts to remove the rind, leaving a large circle of watermelon flesh. This is your “burger patty.”
- apple – use any apple variety you enjoy raw. If the skin is red or green, you may want to peel it first. To help prevent the apple from turning brown, you can sprinkle it with some lemon juice, orange juice or fruit fresh.
- mint leaves – layered on top to resemble lettuce.
How to make a giant cookie burger
- Make 2 large cookies: First, whisk together the wet ingredients. Mix in the dry ones. Sprinkle almonds over the top.
- Bake & allow to cool
- Assemble the burger by sandwiching the fruit in between the cookies
- Cut slices & enjoy!

This recipe can be made a few different ways:
- Follow the recipe below to make a large cookie burger cake
- For individual cookies – use a cookie scoop to divide the batter before baking (at the same time and temperature)
- To just make the cookies – skip layering on the fruit
FAQS & TIPS
Having the fruit touch the cookies for an extended period of time can cause the cookies to get soggy. To prepare this cake in advance, have the cookies made and fruit cut ahead of time. Assemble shortly before serving.

Giant Cashew Cookie Burger Cake
A giant dessert burger cake made from layers of fresh fruit and cashew chocolate chip cookies. It's a vegetarian & gluten free burger everyone will love.
Ingredients
- 2 eggs
- ¼ cup + 2 tablespoons coconut oil (liquid)
- ¼ cup maple syrup
- 2 teaspoon vanilla extract
- ⅔ cup cashew butter
- 2 cups almond flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- 1 teaspoon cinnamon
- ½ cup white chocolate chips (or ¼ cup minis)
- 2 teaspoons sliced almonds
- 2 kiwis, peeled & sliced
- 1 apple, sliced
- ~25 fresh mint leaves
- 1" thick round slice of watermelon, rind removed
Instructions
- Preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
- In a large mixing bowl, stir together the eggs, oil, maple syrup, vanilla and cashew butter.
- Add the dry ingredients. Mix until combined. Stir in the chocolate chips.
- Pour half the cookie dough into the center of each baking sheet. Spread to form a large circle (8" or the same diameter as the watermelon). Arrange sliced almonds over the top of one of them.
- Bake 20 minutes. Leave the cookies on the baking tray or transfer the parchment paper to a towel to cool.
- Assemble the Burger Cake: Invert the cookie without the almonds onto your cake stand/serving plate. Layer with sliced kiwi, watermelon, apple and mint. Top with the remaining cookie.
