Here’s what you need to create these fun cookie burgers.
1. Cookies
These act as both the top & bottom burger buns. More cakey cookies, that puff up when baked, work well for this. Like the tahini chocolate chip cookies recipe used here.
Before baking, sprinkle half the cookies with sesame seeds or mini white chocolate chips to make them look more like the tops of burger buns.
2. Fresh Fruit
This makes up the burger & toppings. Cut a thick slice a watermelon with a round cookie cutter to create the “burger” portion. For the toppings, add round slices of fruit—kiwi, apple, mango—and a few pieces of mint.
3. Toothpicks
You’ll need them to hold everything together. The thick decorative kinds work well. It’s a good idea to pierce the cookie beforehand.

Fruit Burger Recipe
Fruit Burger
Serve the most impressive BBQ dessert with this sweet Fruit Burger recipe. Learn how to easily assemble a burger, made out of cookie and fruit, for dessert.
Instructions
Prepare the Ingredients
2 cookies per burger-I used my Salted Sesame & Chocolate Chip Cookies recipe. Adding sesame seeds to the top cookie help give this cookie a “bun” look. Plus it gives guests a warning sign for a food allergen (since there is also tahini inside the cookie).
Apple – cut the apple crosswise into slices. Cut out the inner core and/or remove any seeds. Brush each side with some orange juice to prevent discoloration.
Mango –use a vegetable peeler to remove the peel. Cut the mango into large slices. Use a cookie cutter or glass that is the same size as the cookies to shape the mango into a circle.
Watermelon –use the same cookie cutter/glass as with the mango to also cut a circle out of a piece of watermelon.
Kiwi –use a vegetable peeler to remove the peel. Cut into slices.
Fresh mint leaves –wash and dry 1-3 mint leaves per burger.
Assemble the Fruit Burgers
Build your burger from the bottom up. Layering the fruit on top of the bottom cookie.
Insert a toothpick into the top cookie. (Before adding it to the stack. This helps prevent it from breaking the cookie.) Carefully add the cookie to the stack and push the toothpick through the fruit layers and bottom cookie.
Notes
This burger can be assembled a couple hours in advance. However the bottom cookie will become a little soggy. To avoid this, it is best to prepare all of the ingredients beforehand and assemble this BBQ dessert burger shortly before serving.
