Before

Workout in the morning before the pre-game shows start

During

Get up and move throughout the game

Select better snacks choose more fruits and vegetables. Use a plate to  keep track of your portions and limit your number of refills.

Drink plenty of water especially if your also drinking alcohol

And after

Don’t be too hard on yourself if you didn’t follow your game plan. Remember that this is also only one day of the year. Make sure to get back on track Monday morning. Do your best.

It can also be called imitation chopped liver, and it’s vegetarian. Really, it’s a blended mushrooms and vegetable mixture. Makes a perfect dip or spread to enjoy at your Super Bowl Party.

Mushroom Dip

Mushroom Dip (Vegetarian Chopped Liver)

Yield: 2 cups

Ingredients

  • ¾ cup walnut halves
  • 1 small onion, sliced (1 cup)
  • 1 small fennel, sliced (¾ cup)
  • 2 tablespoons canola oil
  • 10 oz. baby Bella mushrooms
  • 1 clove garlic
  • 2 hard boiled eggs
  • ½ teaspoon dried thyme
  • ¼ teaspoon ground pink Himalayan sea salt
  • ¼ teaspoon butcher ground black pepper
  • 1 teaspoon red wine vinegar
  • 1 tablespoon mayonnaise

Instructions

  1. Heat walnuts in a large frying pan over medium heat (5-7 minutes). Once they are fragrant, remove the walnuts from the pan. Set aside to cool.
  2. Place the sliced onion, fennel and oil in the same frying pan. Cook over medium heat, allowing their color to develop and caramelize (15-20 minutes). Stir occasionally to avoid burning.
  3. Once the onions and fennel are caramelized, mix the sliced mushrooms into the pan. Continue cooking for 10 minutes. The mushrooms will develop a brown color and most of their liquid should evaporate from the pan. Add in the garlic and cook for an addition minute, while stirring. Once the garlic is fragrant, turn off the heat and allow the mixture to cool slightly.
  4. Transfer the mushroom mixture and all the remaining ingredients to a food processor or blender. Blend together to a smooth consistency.
  5. This dip can be enjoyed right away or refrigerate to chill before serving.
