Here’s what you’ll need to make this recipe. Aside from the mozzarella cheese, the remaining ingredients are all shelf stable and useful pantry items.
- olive oil – choose a bottle you enjoy the taste of
- shichimi togarashi – a Japanese spice blend made from chili flakes, seaweed and sesame seeds. It’s available at Costco, online from OCEANS HALO or you can make it yourself. Another option is to simply substitute with crushed red pepper flakes
- more spices – including granulated garlic, dried parsley flakes, paprika, kosher salt & pepper
- balsamic vinegar
- store-bought or homemade version of hot honey sauce
- fresh mozzarella cheese – used the small pearls here but larger ones could be used as well. You could also cut a large piece of mozzarella into cubes to marinate. If the cheese is packed in water, make sure to drain it before use. (These are delicious in sweet recipes too, like this fruit salad with cheese.)
How to marinate mozzarella balls
Start by seasoning the olive oil marinade.
This can be done straight in the jar/container you plan to store it. Just make sure you have enough room to mix it in. Otherwise, use a separate bowl & transfer it to a container afterwards.
Pour in the oil. I like using a kitchen scale to easily measure it without getting another dish dirty. Then stir in the spices, vinegar and honey.
Use your hands to separate the mozzarella pearls into individual pieces. If they came packed in water, drain beforehand.
Add the cheese straight into the oil mixture. Gently stir until all the pearls are well coated.
Enjoy them right away or refrigerate to marinate mozzarella for longer & enhance the flavors.

Yes, this recipe is can be made ahead of time. (It’s also great for meal prep.) The flavors enhance the longer the cheese marinates.
Any size fresh mozzarella will be good in this marinade. (Cut into bite sized pieces if necessary.) Or swap out the mozzarella for diced feta or cheddar cheese. Soft cheeses, like goat or cream cheese, can be rolled into a ball & placed in the marinade as well. (It will get messy.)
Yes, this recipe can be frozen. Transfer to a freezer safe container first. Then before use, thaw in the refrigerator overnight.
Yes & No. If you wanted to, sure you could dump everything into the bowl and mix. But, this might make it a little harder to combine everything evenly. That’s why I prefer stirring together the marinade before adding in the mozzarella cheese. Start with the oil (it’s easier to be precise with a kitchen scale and adjust when it’s the only ingredient in the bowl), then add all the spices (this order doesn’t matter), followed by the remaining liquids. Helpful Tip: Dip the spoon into the oil before measuring the honey.
The oil will solidify at cold temperatures. Don’t worry, this is normal. Let the mixture sit at room temperature to turn back into a liquid (about 5-10 minutes) before use.

Ingredients
- ¼ cup (60 mL) olive oil
- 1 tablespoon shichimi togarashi or red pepper flakes
- 2 teaspoons granulated garlic
- 2 teaspoons dried parsley
- 1 teaspoon paprika
- ¼ teaspoon kosher salt
- ¼ teaspoon coarse ground black pepper
- 1 tablespoon (15mL) balsamic vinegar
- 1 teaspoon (7 grams) hot honey
- 8 ounces fresh mozzarella cheese pearls, drain if needed
Instructions
- Pour oil into a mixing bowl or a glass jar. Stir in the spices, vinegar and honey.
- Separate the mozzarella pearls and drop them into the seasoned oil mixture. Toss until well coated.
- Serve immediately or refrigerate to marinate for longer and enhance the flavors.

Can increase the oil to ½ cup to also make a dipping oil
