I like to think of this as combination of pan pizza and an onion roll. Turned upside down. This recipe was inspired from a cobbler I made….so the cobbler name wins. Whatever you want to call this. It’s delicious.

Onion Bread

Yield: 8 servings

Ingredients

  • 2 tablespoon (28mL) avocado oil, divided
  • 1 large onion (234 grams), peeled & diced (~1¾ cup, 205 grams)
  • ½ teaspoon black pepper
  • ½ teaspoon (2 grams) kosher salt, divided
  • 1 cup (120 grams) all purpose flour
  • 2 tablespoons (28 grams) sugar
  • 1 tablespoon (11 grams) quinoa
  • 1 teaspoon (4 grams) baking powder
  • ¼ teaspoon (1 gram) baking soda
  • 1 cup (240 mL) 2% milk
  • 1 large egg
  • 1 tablespoon (10 grams) poppy seeds
  • 1½ teaspoons chia seeds (optional)
  • 1 plum tomato, sliced

Instructions

  1. Preheat oven to 400°F
  2. Heat a 10 inch cast iron frying pan over medium heat. Once hot, add 1 tablespoon oil, onions, pepper and ¼ teaspoon salt. Sauté until the onions are translucent (~10 minutes), stir occasionally.
  3. Meanwhile, in a medium bowl, mix together the flour, sugar, quinoa, baking powder, baking soda and remaining ¼ teaspoon salt. Add milk and egg. Whisk together to combine. Set aside.
  4. Once the onions are finished cooking, turn off the heat. Stir in poppy and chia seeds. Pour in remaining 1 tablespoon oil. Arrange tomato slices in a single layer around the pan.
  5. Pour the batter into the frying pan. Carefully transfer to pre-heated 400°F oven. Bake 25-30 minutes, until the top has turned a light brown color.
  6. After removing from the oven, immediately run a thin knife around the edges of the pan to loosen. Cut and serve from the skillet or carefully invert the bread onto a flat serving piece and cut into wedges.
