Swiss Chard Pasta
Ingredients
- 8 stalks Swiss chard, chopped
- 1 tablespoon oil
- 1/2 large onion, sliced
- 1 teaspoon Trader Joe’s BBQ rub & seasoning with coffee & garlic
- 1 tablespoon mascarpone cheese
- 2 cups cooked angel hair pasta
Directions
- Add the Swiss chard to a large, non-stick skillet. Drizzle olive oil over the top and cook uncovered on medium heat. Toss occasionally with tongs, until all the chard has wilted (10-15 minutes). Remove from pan and set aside. Yields approximately 1.5 cups of cooked Swiss chard.
- In the same skillet, add onion and cook on medium-high heat, stirring occasionally, until the onions are translucent and some caramelization has developed (~10 minutes). Mix in the Trader Joe’s spice, cook another 2 minutes.
- Lower the heat to a medium and add in the mascarpone cheese, mix together to combine and cook for another 2 minutes.
- Add the pasta and Swiss chard to the onion mixture. Mix together to incorporate everything together and heat evenly.
