Eight frozen popsicles in mold

Ingredients

  • Dried Spices – ground turmeric, ginger and black pepper
  • Maple Syrup – added as a sweetener
  • Dairy – milk, Greek yogurt
  • Fruit – fresh (cherries), frozen (blueberries) and juice (cranberry or pomegranate).

Insert the popsicle stick once the popsicles are about half way full. You want them to fit inside the molds without falling straight to the bottom. Having some ice pops already at the bottom will help keep the stick in place. (If you’re not making layered popsicles, use tape to secure the sticks.)

Once these are completely frozen & you’re ready for a taste, hold the outside of the mold under running water for a few seconds to easily release the popsicles. Enjoy!

About the Flavors

Gold layer

A frozen version of golden milk latte. A drink made from a combination of milk and spices, including ginger & turmeric. Note that this layer has a grainy texture unless it’s strained before being added to the molds.

Start building your ice pop with this layer at the bottom. That way once popsicle layers are frozen and you remove them from the mold, the gold layer will be at the top.

The turmeric will likely stain your molds a yellow color. To help remove these stains, soak empty molds in a solution of baking soda and water or try one of these options.

Silver layer

Mix together the yogurt, milk and maple syrup. Stir in frozen wild blueberries right before adding the mixture into the molds.

Bronze layer

Combine a red colored fruit juice (no added sugar)such as cranberry, pomegranate or cherrywith Greek yogurt to create this bronze colored mixture. If necessary, add a few pieces of fresh cherries, along with their juices to enhance the color.

Single Pops

Another option is to stick to one flavor per popsicle. This way skips the layering steps and uses a single flavor to fill each popsicle. It’s great for smaller popsicle molds or ones with that don’t have disposable sticks (like these silicone ones). Depending on the size of your popsicle molds, you might need to scale this recipe.

Medal Ice Pops

Yield: 8 popsicles
Prep Time: 15 minutes
Additional Time: 12 hours
Total Time: 12 hours 15 minutes

Golden milk latte, Greek yogurt & berries combine to make this refreshing, triple layered popsicles recipe. A winning snack inspired by gold, silver & bronze medals.

Ingredients

Gold Layer

  • ¾ cup (180 mL) whole milk
  • 1 Tablespoon + 1 teaspoon maple syrup
  • 1 teaspoon ground turmeric
  • ¼ teaspoon ginger powder
  • pinch pepper

Silver Layer

  • ½ cup (130 grams) whole milk Greek style yogurt
  • ¼ cup (60 mL) whole milk
  • 1 teaspoon maple syrup
  • 1 Tablespoon frozen wild blueberries

Bronze Layer

  • ¼ cup (65 grams) whole milk Greek style yogurt
  • 4 ounces (120 mL) cranberry or pomegranate juice
  • 1 teaspoon maple syrup
  • 4 pitted cherries & any juice, optional

Instructions

  1. Prepare the Golden Milk: Place all the ingredients into a small saucepan. Cook over a medium-low heat for 5-7 minutes, stirring frequently until fragrant and just staring to bubble. Remove from heat and allow to cool slightly. Transfer to another dish/cup, refrigerate until chilled.
  2. Divide the golden milk evenly into the popsicles molds, about 1½ tablespoons in each cavity. Wipe away any drips and place in the freezer for 60-90 minutes.
  3. In a small bowl, mix together the silver layer ingredients. Remove the popsicle mold from the freezer and divide this mixture to fill each cavity (about 1½ tablespoons in each). Insert the popsicle sticks and return to the freezer.
  4. Once that later feels set (the sticks are secure), prepare the final layer. In a small bowl, mix together the bronze ingredients. Remove the popsicle mold from the freezer and divide this mixture to fill each cavity.
  5. Refreeze until all the layers are completely frozen.
