What’s a power bowl?
Essentially they are made up of vegetables, whole grains and protein –creating a well balanced dish that is full of nutrients. This month’s Recipe Redux theme highlights power bowls that are made with plant proteins— such as beans, nuts, seeds, soy and even quinoa—and are packed with protein and fiber. These colorful bowls are quick and simple to prepare. The frozen fruit, canned beans and cous cous in this raspberry and black bean power bowl are useful ingredients to have on hand. Add some leftover vegetables to complete this vegetarian recipe and also clear out the refrigerator. Or customize them with your own favorite ingredients.
Raspberry Black Bean Power Bowl
Ingredients
Plant Power Bowl
- ½ cup whole grain Israeli cous cous
- 1 cup black beans
- ⅓ cup pomegranate arils
- 2 tablespoons minced red onion + thin slices for garnish
- 4 cups spinach
- 8 sweet mini peppers, sliced
Raspberry Vinaigrette
- ½ teaspoon lemon juice
- 2 tablespoons crushed frozen raspberries
- 1 teaspoon honey
- 3 tablespoons olive oil
- salt & pepper, to taste
Instructions
- Cook cous cous according to package instructions. (Can sautéed an onion in oil before adding in the dry cous cous)
- Prepare the Raspberry Vinaigrette: Add all dressing ingredients into a small bowl, whisk together until combined.
- In a small bowl, mix together the black beans, pomegranate, minced red onion and 2 tablespoons of the vinaigrette.
- Divide the spinach and remaining dressing between two bowls. Toss to combine. Top each bowl with the bean mixture, cous cous, peppers and sliced red onion.
